The Food Shark is Marfa's most popular lunch spot, and it isn't even a "spot" per say - it's an old food truck with delicious Middle Eastern-meets-Texan comestibles like the Marfalafel, a crispy homemade falafel served in a tortilla (not pita), popular with locals and visitors alike.
Started by two Austin transplants who moved to work at The Thunderbird Hotel, Adam and Krista, the truck is only open Tuesday through Friday, from 11:30am to 3pm.
The menu is largely a reflection of Krista's travels around the world - including the years she lived and "ate well" in Europe - with a dash of Southwest spice added to almost every dish.

This is really cool that you found Marfa, TX. This area of Texas is way out there, but you are right, the artist community is fantastic. I spent a summer in Del Rio, but it must be hotter in Marfa, for sure. But the food is out-of-this world.
